This Walnut wood is amazing to carve. i was lucky to get a nice fresh branch to work a while ago, and made  a few spoons from it. The finish is glass like, Walnut has very close fibers, like most fruit or nut trees, which gives an exceptionally smooth finish. This is a big one. a great server spoon, for rice or dips. 

As is the case for all my wooden spoons;
- I use locally foraged wood, most of which comes from fruit trees. 
- I carve the wood fresh, using an axe and a few knives.
- I finish my spoons with around 3-6 coats of Walnut Oil and I Burnish the spoons between each coat (compressing the surface of the wood by rubbing a smooth object over it), 
giving a very smooth and polished finish... No sandpaper is used, preserving the knife cut finish.

I have designated the Crank as being either 'flat', 'shallow' or 'medium'. 
The crank of the spoon is the curvature or the bend in the spoon which occurs at the beginning of the bowl (at the neck of the spoon). This greater improves the ergonomics of the spoon, and makes the spoon far more effective and comfortable to use... A deep crank does not necessarily mean a 'better' more 'comfortable' spoon. The majority of my personal spoons have a 'shallow' crank. I have a number of 'flat' crank eating and stirring spoons, which are far superior for stirring food in a pot.
